かつてんは1996年に札幌北14条光星にて創業しました。本格的なかつ丼、天丼をたくさんのお客様に毎日食べて頂きたいという想いで、時代と共に進化させ歩んで参りました。私たちの夢は「日本一の丼ぶり屋」になることです。1杯の丼ぶりで、お客様に「感動」を与えたいのです。これからも元気と笑顔と「美味しい丼ぶり」を精一杯提供させて頂きます。今日も来て頂いたお客様に感謝。

【かつ丼】
厳選した豚ロース肉の旨みを最大限まで引き出し、低温でじっくり48時間熟成。焼き上げたパンのフワフワ部分を使用したサクサクオリジナル生パン粉。艶があり、粘りとコシ、甘みに優れた北海道産米の炊き立てご飯。だし香る秘伝のタレととろふわたまごで味わう手作りロースカツ丼。

【天丼】
厳選した食材をカラッと揚がるように冷たいオリジナルてんぷら粉で丁寧に衣付け。素材の旨味を最大限に引き出すオリジナルブレンド油を使用。艶があり、粘りとコシ、甘みに優れた北海道産米の炊き立てご飯。かつおだしの効いた「秘伝のタレ」で味わうこだわり天丼。

【そば】
北海道の大地で育った香りと甘み豊富なそば。かつおと醤油をゆっくり煮出し、旨味を凝縮した合わせだし。特選醤油をじっくり寝かせた本かえし。丼ぶりに合うようコシが強く、のどごしの良い黄金比率の麺打ち。風味豊かなつゆで味わう北海道産生そば。

Katsuten

Katsudon/Tendon

Katsuten was founded in 1996 at Kosei, North 14, Sapporo, Hokkaido. Since then, our mission to offer authentic Katsudon and Tendon to as many customers as possible has never changed and we have been improving our recipe to better fit each era. It has been our long-lasting desire to become the “Japan Number One Domburi (a bowl of rice with various toppings) restaurant”. We wish to impress our customers with the rice bowl we serve. We will continue our best endeavors to offer the best “tasty rice bowl” together with our energetic sprit and smiles.

[Katsudon]
Katsudon is a bowl of rice with a topping of deep-fried pork cutlet and lightly cooked beaten eggs poured over it. The carefully selected pork loin is matured for 48 hours at lower temperature for the best taste. We use our original crispy breadcrumbs made from the roasted fluffy center part of bread. Rice produced in Hokkaido is shiny, slightly chewy and sticky in texture and sweet in taste and is cooked at our restaurant just before we serve it. The rice and cutlet are seasoned with our restaurant’s secret recipe broth and soft and fluffy eggs poured on top.

[Tendon]
Tendon is a bowl of rice with a topping of seafood and vegetables lightly fried in a batter made from eggs, flour and water.(To fry the best selected ingredients as crispy as possible, we use our original flour kept at lower temperature and coat each item carefully in the batter. They are fried in our finest selected oil so that customers enjoy the best taste. Rice produced in Hokkaido is shiny, slightly chewy and sticky in texture and sweet in taste and is cooked at our restaurant just before we serve it. Together with the broth made from bonito stock, the rice bowl recipe is delicately prepared.

Soba, buckwheat noodle made from Hokkaido flour has delicious smell and sweet taste. We slowly extract the essence of the taste of bonito stock in a soy flavored warm broth and blend it with soy sauce repeatedly. The noodle is smooth on the throat, yet slightly chewy, and is the best combination with any bowl of rice. Please enjoy our buckwheat soba noodles made in Hokkaido and flavorful soup in our special recipe.
