Shiraishi Umen is a 400-year-old specialty of Shiraishi Zao, Miyagi Prefecture. Shiraishi Onmen does not use any oil and is easy to digest, and is known for its smooth and elastic texture, as well as its short, 9cm noodles. The basic way of eating it is with a sauce made of bonito and ago dashi (fish stock), and you can also enjoy Onmen with a creative blend of Japanese and Western dishes. Please enjoy it with fresh tempura.
